Core Power Plays

The specs and strengths that make it shine.
Material choice debate: wood vs plastic cutting boards
Wood dries out and the bacteria doesn't form as easily. Plus wood is easier on my knife blades.
I am personally a fan of walnut because I like the way it looks, but I typically use maple boards because it's more affordable.
End grain shows grooves less and tend to hold up better with proper care but wood in general resists bacteria.
I have had an end grain cutting board for over 20 years. End grain shows grooves less and tend to ho
Critique of extra features like juice grooves and rubber overmolding
Juice grooves are overrated.
I have a 35 year old poly board that looks great and a 3 year old board with non slip rubber added that is ready to be trashed.
Desire for juice groove feature
Wish they carried the one with the juice groove!
I do wish it had a juice groove though.
Preference for lightweight cutting boards for convenience
she gravitates towards the smaller lightweight boards
Material impact on knife edge performance
For the price it's a great starter board.
Bamboo is pretty hard on knife edges.
Don't use bamboo its high in silica and will cause your knives edge to go fast.
A board that doesn't get at least a little cut up (like glass) is probably dulling your knife.
Natural wood defects add character
The “defects” are actually a plus in my book, since they show the natural quality of the wood (grain, knots, etc)
the 'defects' give it some neat character and a break from the repeating patterns
Debate over softwood versus hardwood for cutting boards
I’m just trying to let people know that softwoods make for very bad cutting boards.
There’s a lot of fluff out there with companies trying to make cheap boards with softwoods.
the generalization that softwoods should never be used is as dumb as saying that hardwoods should never be used.
Design and construction: cubed layout and end grain benefits
They look nice but also have quite a hefty price tag!
End grain is like the 'sides' of the wood. it's generally better keeping your knives sharper for longer and it will show less cut marks than a long grain cutting board!

Durability and maintenance of wood cutting boards
They hold up great, nobody’s getting sick from bacteria, and we support artisans and craftsmen from a local company.
I've been using one as the only cutting board I own for a half decade now.
Daily use. Beautiful board, looks better than the day it was purchased.
Quality differences in grain orientation and wood selection
Be careful what you buy…like you said, you vet what you pay for.
Personally, I would never use that for a cutting board.

Buyer’s Cheat Sheet

What to check before you click ‘Add to Cart.’
Ease of cleaning benefits of plastic cutting boards
There is a reason commercial kitchens use almost exclusively plastic.
We've been putting ours through the dishwasher for years and they're still in great shape.
You can get commercial plastic cutting boards online for not much money.
Commercial plastic (ie restaurant supply) works well, as do end-grain wooden boards.
Warping issues and maintenance tips for plastic boards
Mine keep warping...
Store them upright! Storing them flat makes them warp.
I was surprised when I put a hot slap of steak on it and it warped quickly.
Even if it warped it’s fairly easy to fix.
Budget-friendly cutting board options
Get the biggest cheapest plastic board you can get your hands on.
How much do you need to spend to get a quality end grain board?
Works great, it seems hard, but you can feel it give when you cut.
Or wait for Larch Wood Canada to put their medium random board on sale for $100 again.
Wide range of cutting board recommendations
Get a glass cutting board.
NoTrax sani-tuff are excellent and durable. Not cheap, but worth it.
They're all cheap so I won't recommend any brands.
It has a trench on one side, if that's your thing, though I usually use the trenchless side.
Wood boards require regular maintenance and can retain odors
I like wood boards but they can hold odors from strong foods more readily than plastic.
Budget-friendly cutting board alternatives
Forget Amazon, you can find some bargains if you look locally, like secondhand stores, or country markets or local artisans.
Concerns over size and material limitations (e.g. ebony boards)
Whoa. I’ve been eying a Stella Falone ebony board but they are just too small.
Do not get ebony for a cutting board it makes for a terrible board material, way too hard probably harder then bamboo.

Cautionary Callouts

Know the pitfalls before they catch you off guard.
Concerns over microplastics exposure from plastic boards
I’ll pass on yet another vector for ingesting microplastics.
You should hoard balls, add them to your own stash, until you have enough microplastics built up to pee out your own polyester mankini.
Concerns over lacquer finish on cutting boards
If you want rubberwood, the lacquer will negate many of the wood properties anyway as that's now the surface your knife's hitting.
We know what a good finish is for cutting boards, and lacquer ain't it.
Isn't there a potential issue with food particles and bacteria getting under the lacquer coating?
Concerns about porosity, cracking, and proper care
You are aware that the entire board if literally filled with open pores, right?
Mass manufactured products can be good but also tend to be built to a price/quality ratio of good enough, which is fine for most peoples needs.
You do get what you pay for and as much as I'm not a fan of mass produced things, this really isn't that bad for the price.
