A stainless steel bowl shouldn't react with any food.
I want to add that acid will leech a very tiny, miniscule amount of metal from stainless steel, and cheap stainless cookware leeches more nickel then higher quality cookware.
If you used a stainless steel pot you will notice your sauce will taste less metallic

Nearly any set of 18/10 stainless bowls is BIFL if you keep them out of the dishwasher.
Why the dishwasher rule? I thought 18/10 was fine for dishwasher use.
Dishwasher detergent, in general, is more reactive than regular dish soap. I've worked in too many kitchens and seen the Hobart eat holes in metal bowls and insert pans.
Well, restaurant dishwashers are way more aggressive than home versions. And the restaurant bowls/pans are almost certainly getting washed far more often than home bowls.
