Perceived low quality
They're crap. Walmart sells them and they're the pack of choice for homeless people in my city.
It's Walmart. They make tons of stuff for cheap, which means the craftsmanship is cheap, and then the price at the end is cheap, but you get what you pay for - cheap.

I have no clue how to wire the hose in order to be still able to open the back access of the pack.
If you’re carrying camera gear, I’d recommend putting the bladder in the front dump pocket.
Lay flat open. Feed the hose through the bottom where the water drop symbol is.
It just falls off and should be saved for hiking.

And looking at your link, it's hard to tell if that's a good deal or not.

Has anyone just put a hydration bladder in their backpack instead of in a camelbak bag?
Lots of packs, maybe most nowadays, have hydration sleeves for this purpose.
My pack doesn't have a sleeve for a bladder but I was thinking of just putting the bladder in a Ziploc bag and putting it in a top pocket of my pack.
You just gotta somehow make sure the hose end is lowest or you'll be sucking air.

You could go with a simple mix of Mio energy + water + vodka. Hydration, energy, and booze all in one.
I've never tried this, so it's purely a guess, but I'm thinking the taste would leach into the pack and you'd be eternally tasting whatever you put in it even if you clean it really well.
My friends tried this a couple years back for cabrewing. They said it lasted the trip, but ate away at the seams and was leaking by the time they got home.

Most of them have reviews that are all over the place, from 5 stars to this is the leakiest worst tasting piece of garbage ever.
I highly recommend getting 3L instead of smaller. You'll probably want it, and it's barely any bigger.
Every other brand I've had has sprung a leak. The Hydrapak brand has been the most resilient of the brands I've used.
I'd recommend 3L as you'll don't need to always fill it to max.
