Versatile cooking options
It’s a different kind of cooking. What I really like about the griddle is that it opened up a ton of other types of food I can cook outside, and it does it very quickly and efficiently.
I use my 36” year round outdoors in the open. Minimum 3 days per week. Every kind of dish from burgers/dogs, ribeye steaks, fried rice dishes, steak sandwiches, quesadillas, breaded chicken, wings, tacos, panini sandwiches salmon, shrimp, stir fry, grilled cheese sandwiches, eggs, omelettes, bacon, breakfast sandwiches, etc.
I'm hoping for somewhere that's good value and quite entertaining as I want to bring my young kids too.
Quick cooking time
The flavor and texture on a perfectly done smash burger is just next level, imo.
Easy to achieve a good cooking crust
I always get the best “crust” on the bottom from that initial press.
Versatile for different cooking styles
The Teppanyaki is better for stir-fry, fried rice, searing steaks, etc, while the grill burner will work more like a typical gas grill where the juices and fats drip down below and the iron griddle leaves grill marks on the meat, which is great for grilling sausages, veggies, and lean meats.
Quick heating and cooking
The grill burner can get really hot, BTUs haven’t been a problem with anything I’ve made for it.
Non-stick surface for easy cleaning
It really is non stick and it has the most amazing slick sheen on it now.

Electric countertop grills don't get nearly hot enough, and you want super high heat delivered quickly, since your steaks are already perfectly cooked inside.
Like others have said, the teppanyaki electric grill probably won't get hot enough.

How can I clone that fried rice they do in Japanese Hibachi restaurants? This seems to be the biggest secret in food.
Most of the secret is old rice (short grain rice - I strongly doubt his restaurant would have made jasmine rice specifically for fried rice), obscene amounts of butter, and soy sauce.
The tons of butter is definitely correct. A good friend of mine is a former Teppanyaki chef and the restaurant he worked for put two sticks of butter for around 10 cups of rice.
You need high-heat and heavy metal. You're not going to get great results in a skimpy skillet or paper thin wok set over a home range.

Any attempts I've made at re-creating it, though, always seem to fall flat.
Most teppanyaki grills range in temperatures from 550-750 degrees, depending on use of gas or electric grills.
